Tomato Rice Soup

Inspired by Madame Jehane Benoit

A traditional Quebec soup.

Ingredients

  • ½ cup/ 125mL Dainty Gem rice
  • 2 tbsp/ 30mL Olive Oil
  • 2 Onions, chopped
  • 3 Ripe Tomatoes, diced, or 1 cup / 250mL Canned Tomatoes
  • 5 cups/ 1¼L Chicken or Veal Stock
  • ½ tsp/ 2.5mL Thyme
  • 1 Bay Leaf
  • 1 Sprig of Parsley
  • 1 tsp/ 5mL Sugar

Preparation

Place the olive oil in a pan. Brown the onion over a low heat, uncovered, for 10 minutes, stirring frequently with a wooden spoon.

Add the fresh or canned tomatoes and simmer over a medium heat for 10 to 15 minutes.

Add the liquid, thyme, bay leaf, parsley, sugar, and Dainty Gem rice. Cover and cook over a medium heat for 20 to 30 minutes.
